Welcome to my summer grilling series, where I share easy menus for entertaining. This is inspired by the fact that we just got our deck rebuilt, so I’ll be spending the rest of the spring and summer enjoying that purchase.

We love to host anyways, but having a brand-new deck is making that all the more enjoyable (the splinters and ever-leaning rails were getting old). I don’t love planning dinner parties far in advance, so I’m always on the hunt for easy, low-maintenance, relatively inexpensive meals to cook largely on the grill.

This one fits the bill. The chicken grills up super quickly because it’s sliced thin, and the marinade makes it juicy and tangy. Then all that’s left to do is make the tomato sauce and boil the spaghetti.

This was all I needed from the grocery store to pull this together. I think that the whole thing came out to be about $50 for 6 people.

If you don’t have a grill, no worries! This can be made on the stove just as easily.

This wasn’t part of my original recipe, but when I was eating leftovers, the next day, I topped the chicken cutlets with a dollop of fresh basil pesto while they were still hot and damn. That’s probably how I’ll serve it next time I make this.
