Pistachio Tiramisu

This one is from the archives. Before I was working with Scratch Made and doing and making videos for social media, I owned a frozen pizza business called Grateful Pizza. There was a blog section of the website for that business, where I posted recipes—subtle foreshadowing. When I closed the business and started dipping my toes into making cooking videos, I transitioned that website into a landing page for booking private events (this is what I thought I’d end up doing full time) and sharing recipes to accompany the videos I was posting to social media.

If you’ve been following me since then, you might recognize this recipe. I only recently closed down that website entirely, which means that all of those recipes from my first year or so of recipe development are no longer out there. So, I’m taking the all-stars and posting them here.

This recipe is too good not to keep in circulation. It’s the perfect tiramisu with just a bit of nutty, salty pistachio flavor. I think the pistachio compliments the espresso and the chocolate really nicely. It’s a low effort, high impact sort of dessert, which is exactly what I’m looking for when I endeavor to make a sweet treat.

Everything you’ll need:

  • Pistachio paste. This stuff is expensive but so damn good. If you have an espresso machine at home, I highly suggest whisking a dollop into your espresso and making a pistachio latte.

  • Espresso. I have a machine so this is easy but these stove top espresso makers are also great, or a strong pot of coffee works just as well.

  • A dish to build the tiramisu in. This trifle dish is perfect.

  • A fine mesh strainer for creating the perfect light dusting of cocoa powder

  • Bowls to mix everything in. I love these glass nesting bowls because they can hold all of the various mise necessary to make it. One for the mascarpone mixture, one for the whipped cream, and one for the espresso.

  • A whisk (I like this one because it’s super sturdy) or hand mixer

  • A rubber spatula for scraping every last bit of goodness out of the bowl. This is my favorite/ only one you need. There are many that look very similar to this, but the handles are flimsy. No good. This is what you want.
